Biwa is one of Portland's "Big Three" Japanese pubs, and is the most accessible both in terms of its central location and its simple but exciting menu. While their menu features many great items, especially grilled, their signature item has to be their ramen. Their salty and seafoody shio ramen is my favorite, but their meaty and oniony biwa ramen is fantastic as well. While the broth already showcases the chef's mastery of a wide range of flavors, the noodles themselves also highlight Biwa's overall technique and ability.
